Sausage and Pepper Pasta
Description
This pasta dish cooks Italian sausage according to package directions before slicing and combining with bell peppers and onions sautéed separately in butter. The cooked peppers soften and develop slight browning, imparting sweetness that contrasts the seasoned tomato sauce enriched with garlic and Italian herbs. Rigatoni pasta is boiled to al dente and tossed with the sauce for even coating. The sausage slices and peppers are arranged atop the pasta, then sprinkled with grated Parmesan and fresh parsley for color and flavor.
The mixture of red, yellow, and green bell peppers adds visual appeal though any color combination works. Short pasta shapes like rigatoni provide sturdy structure to hold the sauce and sausage pieces. This meal suits a comforting dinner, combining hearty meat, vegetables, and a satisfying pasta base.
Any mild or sweet Italian sausage can be used. The use of butter in cooking the vegetables lends subtle richness, balancing the acidity of the tomato sauce. Parmesan and fresh parsley added at the end enhance the overall flavor without overpowering the main ingredients.
