Description

This pasta dish cooks Italian sausage according to package directions before slicing and combining with bell peppers and onions sautéed separately in butter. The cooked peppers soften and develop slight browning, imparting sweetness that contrasts the seasoned tomato sauce enriched with garlic and Italian herbs. Rigatoni pasta is boiled to al dente and tossed with the sauce for even coating.   • 1 package Italian sausage links sweet or mild
  • 2 teaspoons olive oil
  • 12 ounces rigatoni pasta
  • 2 tablespoons butter divided use
  • 2 cups bell pepper any color you like, sliced
  • 1/2 cup onion diced
  • 1 teaspoon garlic minced
  • 16 ounce can tomato sauce
  • 1 teaspoon Italian seasoning
  • salt to taste
  • black pepper to taste
  • 1/4 cup Parmesan Cheese grated
  • 2 tablespons parsley chopped

Instructions

  1. Heat 2 teaspoons of olive oil in a large pan, place the sausages in the pan and cook them according to package directions. 
  2. Cut the sausages into slices.
  3. Cook the pasta in salted water according to package directions.
  4. Melt one tablespoon of butter in a large pan over medium high heat. Add the peppers and season with salt and pepper to taste.
  5. Cook for 5-6 minuted or until peppers have softened and are lightly browned. Remove the peppers from the pan.
  6. Add the remaining tablespoon of butter and onion to the pan. Season with salt and pepper. Cook for 5-6 minutes or until onions are softened. 
  7. Add the garlic to the pan and cook for 30 seconds.
  8. Add the tomato sauce and Italian seasoning to the pan and bring to a simmer.
  9. Drain the pasta and toss with the tomato sauce. 
  10. Arrange the sliced sausage and peppers over the pasta. Sprinkle with parmesan and parsley, then serve.

Notes

  • Mild or sweet Italian sausages are suitable for this recipe.
  • Mix bell pepper colors as preferred for appearance and flavor.
  • Short pastas like penne, rigatoni, or rotini work well to hold the sauce.
