Sausage Kale and White Bean Soup

Sausage Kale and White Bean Soup combines Italian pork sausage with kale and white beans in a savory broth. The sausage adds a rich, meaty flavor, while the kale and white beans provide hearty texture and nutrition. Red wine vinegar brightens the broth, balancing the savoriness. It's a warming soup suitable for cooler days, offering both protein and vegetables in one pot.

Description

The Sausage Kale and White Bean Soup features browned Italian pork sausage cooked with onions and garlic, seasoned simply with salt and black pepper. Finely chopped kale and canned white beans are added along with chicken broth, creating a nourishing base. Simmering the soup melds the flavors while maintaining the hearty texture of the beans and slight chew of the kale. The addition of red wine vinegar at the end adds acidity that lifts the overall flavor. The soup is best served with freshly grated parmesan cheese, cracked black pepper, and bread to soak up the broth.

The onion and garlic sauté with sausage renders a flavorful base, and the kale's slightly bitter greens balance the richness of the meat. The canned beans are soft but hold shape within the broth's warmth. Simmering for 20 minutes allows flavors to blend without overcooking the greens. The vinegar introduces a subtle tang that brightens the dish.

This soup works well as a comforting main dish on chilly days or as a filling starter. Serving with crusty bread and parmesan adds texture and richness, complementing the savory and slightly tangy broth.
