Sausage & White Bean Cassoulet

Baked sausages in an herbed navy bean sauce stewed with onion, garlic, tomatoes, thyme and oregano.

Ingredients

Servings

Cassoulet:

  • 2 tablespoons extra virgin olive oil , divided
  • 6-8 Italian sausage links sweet
  • 1 yellow onion , thinly sliced
  • 3 cloves garlic , minced or pressed
  • 1 tablespoon thyme fresh leaves
  • 1 teaspoon oregano minced, fresh
  • 1/2 cup white wine dry
  • 1/2 cup chicken broth low sodium
  • 2 teaspoons Dijon mustard
  • 2 Navy beans 15.5 ounce cans
  • 15.5 ounces diced tomatoes drained, petite
  • 1 teaspoon kosher salt coarse

Topping:

  • 1/3 cup seasoned bread crumbs
  • 1/4 cup Parmesan Cheese , finely shredded
  • 1/4 teaspoon kosher salt coarse
  • 1/2 teaspoon black pepper ground

Instructions

  1. Preheat the oven to 400°F.
  2. In a large Dutch oven, heat 1 tablespoon of the olive oil over medium heat.
  3. Add the sausages, browning on both sides, approximately 3-4 minutes. Remove to a plate and set aside.
  4. Add the remaining 1 tablespoon of olive oil to the pot. Add the onions, sauteing until they start to soften, approximately 2-3 minutes. Add the garlic, thyme and oregano, cooking for an additional 1 minute.
  5. Deglaze the pan with white wine, scraping up all of the browned bits. Add the chicken broth, Dijon mustard, navy beans with liquid, drained tomatoes and salt. Bring to a low simmer and then add the sausages back to the pot. Turn the heat off.
  6. Prepare the topping by stirring together the bread crumbs, parmesan cheese, salt and pepper.
  7. Evenly sprinkle the topping over the top of the cassoulet. Bake in the preheated oven for 18-20 minutes, or until breadcrumbs are lightly browned.
  8. Remove and allow to rest for 5 minutes before serving over rice or with crusty bread.
