Description
This simple sauté begins by heating olive oil in a hot skillet to quickly cook asparagus stalks trimmed of tough ends. The asparagus is tossed frequently for even cooking, achieving a bright green color and tender-crisp bite. After about three minutes, minced garlic is added, cooking briefly to soften and release its aroma without burning.
The pan is removed from heat and shaved Parmesan cheese is added last, melting slightly into the warm asparagus for a salty, nutty finish. The cheese coating enhances the dish’s flavor while maintaining the vegetable’s fresh profile.
Serving immediately ensures the asparagus stays warm and retains its appealing texture. It pairs well as a side vegetable with a variety of main dishes, especially those featuring meats or pasta.
Ingredients
- 1 tablespoon olive oil
- 2 lb asparagus tough ends cut or snapped off
- 3 cloves garlic finely minced
- 1 ounce Parmesan Cheese shaved with a vegetable peeler
Instructions
- Heat a large skillet over high heat. Once it's hot, add the oil and asparagus. Using tongs, toss the asparagus so that it cooks evenly. (Make sure the asparagus is completely dry before adding it to the pan to avoid any oil splatters)
- After 3 minutes, add the garlic to the pan. Cook for 2 minutes more then remove the pan from the heat.
- Add the parmesan to the pan and toss the asparagus so it's coated in the cheese. Serve right away.
