Sauteed cabbage with peppers, or the one dish to get right

This sautéed cabbage dish features thinly sliced cabbage cooked with onion, colorful bell peppers, garlic, and a tomato-based sauce seasoned with oregano, chili flakes, vinegar, and optional sugar. The vegetables are slowly caramelized and tenderized for a balanced savory and mildly spicy flavor, complemented by fresh herbs.

Description

The recipe starts with thin strips of onion and bell pepper sautéed at low to medium heat to develop sweetness and soften the vegetables. Coarsely chopped garlic is added briefly before incorporating thinly sliced cabbage, which cooks covered to steam and soften while blending flavors across the ingredients.

The tomato element can be added as paste or fresh tomatoes cooked separately before combining with oregano and chili flakes. The mixture slowly simmers uncovered to deepen the sauce and meld the spices. Vinegar adds brightness while optional sugar balances acidity and heat.

The finished dish delivers tender, slightly caramelized cabbage and peppers with a rich, savory tomato-herb sauce that has a gentle bite from chili flakes. Fresh parsley or cilantro brings a herbal lift if used.

This is a versatile vegetable side that pairs well with a variety of main dishes or can stand alone for a satisfying meal of sautéed greens and peppers.

Ingredients

Servings
  • 1-2 onion
  • 1-2 bell pepper red, yellow or orange
  • 1 cabbage thinly sliced
  • 4 cloves garlic
  • 1 can tomato paste or 4-5 tomatoes, in season.
  • 2 tsps oregano if using fresh, use 2 Tbs, or basil
  • 1 teaspoon salt
  • ½ teaspoon chili flakes or more, to taste
  • 1 Tb sugar optional
  • 1 Tb vinegar white wine, apple cider. or regular
  • parsley optional, chopped, or cilantro or chives, to taste

Instructions

  1. Slice onions and peppers into thin strips.
  2. Sauté onions on low-medium heat for 5-10 mins, until they become translucent. Add peppers, sauté another 10 mins, until pepper strips and onions start to caramelize, stirring occasionally.
  3. Chop garlic coarsely. Add to pan, sauté for 1 minute.
  4. Chop cabbage head into thin strips. Add to pan, stir to mix with other ingredients, cover with lid, and sauté on medium heat for 15 minutes. Every 5 minutes or so, check that the cabbage and peppers aren't sticking to the bottom, and give the pan a good stir.
  5. If using fresh tomatoes, chop them finely and let them cook without adding the spices for 10 minutes on medium heat. Then add spices and cook for another 5 mins. If using tomato paste, add spices along with paste and let cook, uncovered, for 15 minutes.
  6. Taste, and adjust flavours as necessary.
