Savory Soy Milk Soup w/ Fried Dough (Dou Jiang)

Dou Jiang is a savory soy milk soup served warm with toasted fried dough slices, pickled mustard stems, and a balance of tangy Chinese black vinegar, sesame oil, salt, and white pepper. The soy milk acts as a smooth, mild base that is enhanced with flavorful condiments and garnishes to create a comforting and nuanced dish.

Description

This recipe prepares a simple yet layered soup by heating unsweetened soy milk and combining it with a prepared bowl containing black vinegar, salt, white pepper, sesame oil, and pickled mustard stems (zha cai). The mixture is poured over the hot soy milk without stirring initially to allow flavors to meld. Fried crullers, sliced after toasting, add a crunchy texture contrast when scattered on top along with chopped scallions for freshness.

The interplay of the creamy soy milk with the salty, tangy, and slightly pungent condiments makes for a complex savory profile ideal for breakfast or light meals. The toasted fried dough provides chewiness and richness, balancing the soup’s lightness.

Dou Jiang is served immediately while still warm to enjoy the freshness of the seasonings combined with the mild soy milk. Adjusting the amount of vinegar and seasonings can suit personal preferences. This dish exemplifies simple ingredients combined thoughtfully for comforting traditional flavor.
