Scallion Oil Noodles
Description
The preparation begins by heating neutral cooking oil until smoking, then stirring in strips of scallion until they emit a deep fragrance and are moderately charred. This process infuses the oil with scallion essence. Fresh noodles are boiled to al dente for a firm yet tender bite, drained, and then combined with the scallion oil and seasoning sauces including oyster and soy sauce. Tossing the noodles evenly coats them in the richly flavored oil and sauces.
The noodles take on a glossy sheen and aromatic character from the scallion oil, matching well with the umami depth of oyster and soy sauce. Using fresh, quality noodles is important for the optimal texture described as chewy yet tender. This dish can be served immediately as a simple side or light meal.
Using Taiwanese fresh noodles identified as "陽春面" gives the preferred texture and flavor. Adjust the amount of oil based on dietary preferences, as reducing oil changes the mouthfeel slightly but still delivers the key savory scallion flavor.
Ingredients
- 3 tablespoons neutral cooking oil generic cooking oil
- 2 talks scallion roots trimmed and cut into strips
- 8 oz (230g) fresh noodles
- 1 tablespoon oyster sauce
- 1 teaspoon soy sauce
Instructions
- Heat a wok with the cooking oil until it begins to smoke. Add the scallion strips and stir continuously with a spatula until the scallions are aromatic and moderately burned. This process will release the full fragrance of the scallions and infuse the oil with their intense aroma. Set aside the scallion oil.
- Heat a pot of water until it boils. Cook the fresh noodles until al dente; they should be cooked through but still somewhat firm and springy. Drain the noodles and transfer them to a bowl.
- Add the scallion oil, oyster sauce, and soy sauce to the noodles. Using a pair of chopsticks, toss the noodles to blend well with the scallion oil and sauces. Serve immediately.
Notes
- Use Taiwanese fresh noodles such as Fresh Shanghai Noodles (阳春面) for the best texture and flavor.
- For a lighter option, reduce scallion oil to 2 - 2 1/2 tablespoons; 3 tablespoons yields fullest flavor.
