This scalloped corn is the perfect holiday side dish! Creamy, creamy and crunchy, it's baked until warm and bubbly and cheesy, then topped with buttery ritz crackers. Tons of flavor and so easy to make!

Ingredients
- 1 ½ cups half and half
- 3 large eggs
- 1 tablespoon sugar
- kosher salt and pepper
- 3 10 oz bags of frozen corn, thawed
- 8 ounces sharp white cheddar, freshly grated
- 2 cups crushed Ritz crackers
- 4 tablespoons butter
- 3 tablespoons chopped fresh chives
Instructions
- Preheat the oven to 350 degrees F. Spray a 9x13 inch baking dish with nonstick spray.
- In a large bowl, whisk together the half and half, eggs, sugar and a big pinch of salt and pepper. Fold in the thawed corn and half of the cheese. Stir in ½ cup of the crushed crackers.
- Spread the mixture into the baking dish, spreading it out so it’s in an even layer. Bake for 25 to 30 minutes.
- While the corn bakes, stir together the remaining crushed crackers and the melted butter until the crackers are moistened.
- Remove the corn and sprinkle the remaining cheese on top. Top with the buttery crackers. Return the dish to the oven for another 20 to 25 minutes, until the edges are set and golden.
- Remove from the oven and top with the fresh chives. Serve!
