Description
The recipe starts by boiling corn syrup and granulated sugar, then removing from heat to stir in creamy peanut butter. This mixture is combined with Rice Krispies cereal until well coated and pressed evenly into a buttered pan, forming the bar base. The topping consists of melted butterscotch and milk chocolate chips blended until smooth and spread over the cereal layer.
After cooling completely, the combined layers set into a firm yet chewy bar with a balance of peanut butter richness, caramel-like butterscotch sweetness, and chocolate flavor. The bars cut easily into squares for serving.
Scotcheroos can be stored at room temperature in an airtight container for up to five days. They freeze well, either wrapped as a whole pan or divided pieces, and should be thawed at room temperature before eating. Substitutions are possible, like using alternate cereals such as Cheerios or cornflakes, or swapping semi-sweet chocolate chips for the milk chocolate in the topping. Using store-bought creamy peanut butter is suggested for ease and consistency.
Ingredients
- 1 cup light corn syrup
- 1 cup granulated sugar
- 18 ounces peanut butter 2 1/4 cups, see note 1, creamy
- 6 cups Rice Krispies cereal (see note 2)
- 1 cup butterscotch chips
- 1 cup milk chocolate chips (see note 3)
Instructions
- Coat a 9-inch by 13-inch pan with butter or nonstick spray. Combine corn syrup and sugar in a large stock pot or Dutch oven and bring to a boil.
- Remove from heat and stir in peanut butter. Add cereal to pot and stir until evenly coated. Press into prepared pan.
- In medium sauce pan, combine butterscotch chips and chocolate chips and heat until melted and smooth. Spread evenly over cereal bars and cool completely. Cut into squares.

- Store-bought creamy peanut butter simplifies preparation and yields consistent bars.
- Rice Krispies are classic, but other cereals like Cheerios or cornflakes may be used as alternatives.
