Description
Scotcheroos start with crispy rice cereal mixed into a hot syrup of sugar and light corn syrup (or honey as a substitute), blended with creamy peanut butter for a sticky, chewy texture. This mixture is pressed firmly into a greased pan to form the base. The topping consists of melted semi-sweet chocolate chips combined with butterscotch chips, imparting a smooth, sweet, and slightly caramel flavor layer.
The bars set at room temperature until firm, providing crunchy chewiness from the cereal and a glossy, rich chocolate-butterscotch layer. These bars are convenient to make ahead and share, requiring no baking and minimal preparation.
Storing them in an airtight container at room temperature helps retain freshness for a day or two, while freezing extends storage up to three months. Use high-quality chocolate chips for optimal melting and flavor. For gluten-free versions, substitute the cereal accordingly.
Ingredients
- 6 cups crispy rice cereal (like Rice Krispies)
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup peanut butter creamy
- 12 oz chocolate chips good quality like ghirardelli or guittard, semi-sweet
- 12 ounce bags butterscotch chips
Instructions
- Grease a 9x13' inch baking pan or line with parchment paper.
- Rice Krispies Layer: Place cereal in a large mixing bowl. Set aside. In a large saucepan over medium heat, combine the sugar and corn syrup. Bring to a low boil and then immediately remove from heat. Stir in peanut butter until smooth. Pour mixture over the cereal and stir to evenly coat. Press firmly into prepared pan.
- Chocolate Layer: Add the chocolate chips and butterscotch chips to a microwave safe bowl. Microwave on low power for about 2 minutes, stirring every 30 seconds, until melted and smooth. Spread over rice krispies layer and allow to cool completely before cutting and serving.
