Ingredients
- 1 ¼ cups creamy peanut butter
- 1 cup granulated sugar
- 1 cup light corn syrup
- 6 cups rice krispie cereal
- 11 ounce package Butterscotch morsels
- 11 ounce package semisweet chocolate chips
Instructions
- Grease a 9x13-inch baking pan with cooking spray. Set aside.
- Stir peanut butter, sugar, and corn syrup together in large saucepan.
- Cook over medium-low heat, stirring frequently, until melted. Remove from heat.
- Add cereal; stir until thoroughly coated.
- Press onto bottom of prepared baking pan.
- Microwave butterscotch morsels and semi-sweet chocolate morsels in large microwave-safe bowl for 1 minute.
- Stir. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.
- Spread over cereal mixture.
- Chill for 15- 20 minutes or until topping is firm. Cut into bars.
Notes
- Peanut butter: I don't recommend using natural peanut butter in this recipe. Regular creamy peanut butter works well.
- Corn syrup: Corn syrup helps to make the bars chewy and keep the sugar from crystalizing.
- Cereal: Scotcheroos are traditionally made with Rice Krispie cereal, but there's no reason why you couldn't use a different type of cereal if you prefer.
