Scotcheroos Recipe
Description
This recipe starts by combining Rice Krispies cereal in a large bowl. A mixture of sugar, creamy peanut butter, and light corn syrup is heated to a boil on the stovetop while stirring continuously. The hot peanut butter mixture is poured over the cereal and mixed well, binding the cereal into a sticky base. This mixture is pressed firmly into a greased 9x13-inch pan to form an even layer.
Separately, chocolate chips and butterscotch chips are gently melted together over low heat. The melted chips are poured evenly over the pressed cereal layer, creating a glossy, rich topping. The bars are chilled for at least 30 minutes to allow the chocolate layer to set before cutting and serving.
The resulting Scotcheroos have a chewy, crunchy base with sweet, creamy chocolate and butterscotch on top, making them a classic treat for dessert or snacks. They can be made ahead and stored covered at room temperature.
Alternatives to stovetop melting include microwaving the chips in short intervals, stirring carefully to avoid overheating. Using gluten-free Rice Krispies is recommended for gluten-sensitive diets. Do not overcook the peanut butter mixture to maintain a chewy texture.
Ingredients
- 6 cups Rice Krispies cereal
- 1 cup sugar
- 1 cup peanut butter creamy
- 1 cup light corn syrup
- 1½ cups chocolate chips
- 1½ cups butterscotch chips
Instructions
- Pour Rice Krispies into a large bowl and set aside.
- In a medium pot over medium-high heat, bring sugar, peanut butter, and corn syrup to a boil, stirring constantly.
- As soon as the mixture starts to boil, pour it over the cereal and mix well. Pour into a greased 9x13-inch pan and gently press down with a spatula to spread evenly into the pan.
- In a small pot, melt chocolate and butterscotch chips over low heat, stirring constantly. Pour over pressed Rice Krispies and let set for at least 30 minutes before cutting and serving.
Notes
- Make Scotcheroos 1-2 days ahead; store covered at room temperature.
- Microwave chocolate and butterscotch chips in 30-second intervals, stirring between each, to avoid overheating when melting.
- For a decorative touch, drizzle melted butterscotch over chocolate and use a toothpick to create patterns before setting.
- Use gluten-free Rice Krispies if gluten sensitivity is a concern.
- Avoid overcooking the peanut butter and sugar mixture to keep the base chewy.
