Description

This Scotcheroos recipe creates a sweet, no-bake bar with a peanut butter and cereal base.   • 1 cup honey
  • 3/4 cup brown sugar
  • 1 1/2 cup peanut butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 cups Rice Krispies
  • 2 tablespoons peanut butter
  • 1 3/4 cup butterscotch chips 10 ounces
  • 1 1/2 cup semi sweet chocolate chips

Instructions

Get Prepped

  1. Butter or grease a 9 x 13 inch pan, set aside.

Make the Base

  1. In a medium sauce pan combine honey and brown sugar over low heat until just before mixture boils and and sugar is dissolved, being careful not to over boil. (About a minute).
  2. Remove the pan from the heat and add peanut butter, vanilla and salt stirring until smooth and well blended
  3. Add rice krispies cereal to a big bowl and pour the sugar peanut butter mixture over cereal and stir to combine it all. Press into prepared dish using a piece of parchment paper to help smooth it.

Make the Topping

  1. In a microwaveable bowl add 2 Tablespoons of peanut butter, butterscotch morsels and chocolate chips. Microwave on low heat for 2-3 minutes stopping to stir it every 30 seconds until completely melted and combined.
  2. Pour butterscotch and chocolate mixture on top of the bars and spread evenly.
  3. Place the bars in the refrigerator for 20-30 minutest to allow the chocolate to harden before cutting.
  4. Remove from the refrigerator 10 mins before serving, cut into bars and enjoy.
