Ingredients
- 1 cup pistachio shelled, raw, 6 oz / 170 g
- ¼ cup granulated sugar 2 oz / 57 g plus ¼ cup (2 oz / 57 g), divided
- 2 tablespoons plus 2 cups (16 fl oz/480 ml) whole milk, divided
- 2 tablespoons butter 1 oz / 28 g
- ½ teaspoon almond extract
- 1 egg at room temperature, large
- 2 egg at room temperature, large yolks
- 2 tablespoons cornstarch
- ¼ teaspoon salt
- Whipped Cream (for serving, optional)
