Description

The hot syrup is slowly poured into the egg whites while mixing constantly, which cooks the egg whites and makes the mixture glossy and fluffy. When the mixture thickens and loses its sheen, spoonfuls are dropped onto waxed paper to cool and harden into crisp candy.

The candy has a crisp exterior and a slightly softer, airy interior from the beaten egg whites, delivering a light and sweet vanilla flavor. It is a traditional treat that can be enjoyed on its own or offered at holiday gatherings.

  • 1 1/2 c white sugar
  • 1 1/2 c brown sugar
  • 3/4 c water
  • 2 egg white
  • 1 t vanilla

Instructions

  1. Combine sugar and water. Stir until sugar is dissolved
  2. Cook without stirring to 255 degrees or until mixture will form a hard ball in cold water.
  3. While mixture is cooking, beat egg whites until stiff. Add vanilla to mixing bowl.
  4. When syrup reaches proper temperature, pour into egg white bowl, beating constantly with mixer.
  5. When mixture loses its gloss and will hold a shape, drop from teaspoon onto waxed paper.
  6. Wait for it to cool, then it is ready to eat!

  • Beating the egg whites until stiff peaks form is essential for the candy's light texture.
  • Pour the hot syrup slowly into the egg whites while mixing to avoid cooking them prematurely.
  • Once the candy mixture loses its gloss and holds shape, drop spoonfuls onto waxed paper to cool.
