Seaweed Egg Drop Soup
Description
The soup begins with a broth of water or chicken stock simmered briefly with smashed ginger to impart gentle aromatic heat. Dried seaweed is soaked or rinsed per instructions before being added to the broth, contributing a subtle oceanic flavor and tender texture. Separately, eggs are whisked with a pinch of salt and gradually drizzled into the hot stock off the heat while swirling, which creates soft ribbons of cooked egg, known as egg flowers.
Additional aromatics such as chopped scallions, coriander, dried shrimp, and sesame oil are prepared in serving bowls to fold into the soup when poured in, enhancing each bowl with fresh herbaceousness, nuttiness, and savory complexity. The resulting soup is warm, delicate, and lightly textured, with the seaweed providing gentle chew and the eggs adding smoothness and visual appeal.
This soup is well suited as a light appetizer or a comforting dish when a subtle savory broth with gentle egg and seaweed is desired. It is best enjoyed hot, where the fragrance of ginger and sesame oil complement the seaweed and egg.
Ingredients
- 3 egg whisked with salt
- 1 tumb ginger ,smashed
- 6 cups water or chicken stock
- 10 g dried seaweed divided into two serving bowls for me, Chinese
- 2 tbsp. sesame oil
- 2 tbsp. scallion chopped
- 2 tbsp. Coriander chopped
- 1 tbsp. dried shrimp
- 1 tsp. salt
- ground white pepper as needed
Instructions
- Add chopped scallions, coriander, dried shrimp, sesame oil, salt and pepper in serving bowls too.
- make sure you buy high quality dried seaweed soak, and read the instructions to see whether you need to wash it or not. Following the instructions and then add dried seaweed too (either dried or washed as instructed).
- Whisk egg with a small pinch of salt and pepper.
- Add water to a pan or wok, around 6 cups of water or chicken stock with smashed ginger. Bring to a boiling and then turn off the fire. Pour the egg liquid in by swirling. You will see the lovely flower in the pan.
- Pour the egg flower directly to the serving bowl. The remaining heat will stimulate the aroma immediately. Serve hot!
