Sensational Double Layer Pumpkin Pie

This layered pumpkin pie features a creamy blend of softened cream cheese and Cool Whip as a base topped with a spiced pumpkin pudding mix. The graham cracker crust holds these smooth, contrasting layers together, creating a light but flavorful dessert. Chilling the pie allows the layers to set, offering a cool, silky texture with warm cinnamon, ginger, and clove notes balanced by a touch of vanilla pudding.

Description

Sensational Double Layer Pumpkin Pie brings together cream cheese sweetened with sugar and milk whipped with Cool Whip to form a fluffy foundation within a graham cracker crust. The top layer combines half-and-half with instant vanilla pudding mix, folded with pumpkin puree and a warming blend of cinnamon, ginger, and clove. Once chilled for at least three hours, the pie sets into two distinct creamy layers with subtle spice and smooth sweetness. This pie works well as a festive dessert, offering a lighter alternative to traditional pumpkin pies with its pudding texture and tang from the cream cheese base.

Preparation involves no baking, making it accessible with pantry staples and a ready-made crust. The mix of instant pudding and pumpkin ensures a tender, custard-like top layer, while the cream cheese layer adds richness and a slight tart counterpoint. Serving chilled helps maintain firmness and a refreshing mouthfeel.
