Sesame Noodles

Sesame Noodles combine tender cooked udon or similar noodles tossed in a sauce made of toasted sesame oil, tamari, rice vinegar, peanut butter, brown sugar, ginger, garlic, and sriracha. The cold noodles receive a creamy, tangy coating with a touch of heat, finished with crunchy roasted peanuts, scallions, and sesame seeds for contrasting textures.

Description

This Sesame Noodles recipe features udon noodles cooked until tender, rinsed in cold water to stop cooking and cool, then coated with a rich, well-balanced sauce. The sauce blends toasted sesame oil, tamari soy sauce, seasoned rice vinegar, smooth peanut butter, light brown sugar, freshly minced ginger, garlic, and sriracha chili sauce. The mixture produces a creamy, slightly sweet, tangy, and mildly spicy dressing that clings to the noodles.

Once combined, the noodles are garnished with chopped roasted peanuts, thinly sliced scallions, and toasted sesame seeds, adding crunch and aroma. The dish serves well as a chilled side or light entrée with nutty and savory notes from the peanut butter and sesame oil combined with brightness from the vinegar and spiciness from the sriracha.

The recipe can be made gluten-free by selecting suitable noodles and tamari. Using fresh ingredients like ginger and garlic gives the sauce vibrancy, while chilling enhances the melding of flavors.
