Description
Sesame Noodles are made using fresh egg noodles, preferably thin Hokkien, which provide a slippery, tender texture ideal for coating with a flavorful sesame-based sauce. The sauce blends dark and regular soy sauces for depth and umami, balanced with rice vinegar’s acidity, the rich nuttiness of toasted sesame oil, and a smooth texture from peanut butter and sesame paste (or tahini as a substitution). Freshly grated ginger and minced garlic add aromatic layers, while a touch of white sugar helps balance the flavors. Garlic chili paste introduces adjustable spiciness.
The noodles are cooked, drained, and slightly rinsed to prevent sticking, then tossed in the sauce along with finely sliced green onions, toasted sesame seeds, and optionally crushed peanuts for added crunch. The dish can be garnished with extra sesame seeds and served warm or at room temperature, making it adaptable to different serving preferences.
The notes include guidance on using fresh noodles over dried for better texture but acknowledge dried or other types of noodles can also be used with some exceptions. They also offer substitution options for soy sauce and sesame paste to adapt to available ingredients, and note that chili paste amounts can be adjusted or replaced according to taste.
Ingredients
- 500 g / 1 lb fresh egg noodles (Note 1)
- 3/4 cup green onions , finely sliced (scallions)
- 1 tbsp sesame seeds plus more for garnish
- 2 - 3 tbsp peanuts optional, plus more for garnish, crushed
Sauce:
- 1 ½ tbsp dark soy sauce (Note 2)
- 1 tbsp soy sauce Note 2
- 1 ½ tbsp rice vinegar
- 2 tbsp sesame oil
- 2 tsp ginger fresh grated
- 1 garlic minced, clove
- 2 tsp white sugar
- 2 tbsp peanut butter
- 1 tbsp sesame paste Note 3, or tahini; aka Chinese sesame paste
- 2 tsp garlic chili paste Note 4, like Sambal Oelek or Sriracha, adjust to taste
Instructions
- Cook noodles per packet directions. Drain then briefly rinse under tap to stop them sticking together.
- Place Sauce ingredients in a bowl. Mix until smooth – microwave briefly if required to assist.
- Place the noodles in a large bowl, add shallots, dressing, sesame seeds and peanuts if using. Toss well. Garnish with more sesame seeds. Serve warm or at room temperature.
Notes
- Use fresh egg noodles such as thin Hokkien for best texture; dried noodles or alternatives like rice noodles or ramen can also work, except very thin vermicelli/glass noodles which are not recommended.
- Substitute all soy sauce with either all-purpose or light soy sauce, but avoid using only dark soy sauce as its flavor will overpower the dish.
- If Chinese sesame paste is unavailable, tahini can be used with minimal difference in flavor; peanut butter alone also provides a strong sesame note.
- Adjust the amount of garlic chili paste (like Sambal Oelek or Sriracha) to control spiciness or substitute with preferred chili sauce or flakes.
