Sesame Noodles

Sesame Noodles combine fresh egg noodles with a sauce made from soy sauce, rice vinegar, peanut butter, toasted sesame oil, and chili garlic sauce. Garnished with green onions and sesame seeds, these noodles have a savory, slightly tangy, and nutty flavor with a hint of spice. They can be served warm or cold and are suitable for make-ahead meals.

Description

This recipe uses fresh egg noodles cooked according to package directions, then rinsed with cold water to stop cooking and reduce stickiness. The sauce blends soy sauce, rice vinegar, creamy peanut butter, toasted sesame oil, fresh ginger, chili garlic sauce, and optionally brown sugar for a balance of savory, tangy, and mildly sweet flavors.

After tossing the noodles with the sauce, sliced green onions and sesame seeds are stirred in, providing a fresh crunch and nutty aroma. Additional green onions and sesame seeds can be added as garnish before serving. The noodles offer a smooth, slightly chewy texture, contrasted by the crunchy garnishes.

They keep well refrigerated for up to four days, making this dish convenient for meal prep. Using authentic fresh Asian-style noodles enhances texture but common fresh egg noodles from many grocery stores work well.
