Sesame Oil Chicken Recipe
Description
This Sesame Oil Chicken starts by heating sesame oil in a skillet or wok until hot, then stir-frying thin strips of peeled ginger until aromatic and lightly browned. Chicken pieces are added to the oil and quickly stir-fried before seasoning with soy sauce, Shaoxing wine, and ground white pepper. A bit of water is then added to provide moisture for simmering.
The pan is covered and the dish is cooked on low heat for about 10 minutes, allowing the chicken to become tender and the sauce to thicken and coat the pieces well. The ginger's toasted flavor and the sesame oil’s nuttiness combine with the salty depth from soy sauce and sharpness of white pepper for a complex but balanced taste.
This chicken dish is ready to serve immediately after cooking, offering tender meat with a subtly flavored sauce. It would pair well with rice or steamed vegetables for a simple meal. Using bone-in chicken legs or thighs is possible by cutting them into pieces, which can add richness though cooking times may vary slightly.
If the sauce reduces too much and dries out during cooking, adding more water and continuing to cook until the chicken is tender will ensure a moist result.
Ingredients
- 2 tablespoons sesame oil
- 2-3 inches ginger peeled and cut into thin strips
- 12 oz (350g) chicken cut into pieces
- 2 tablespoons soy sauce
- 1 tablespoon Shaoxing wine or Chinese rice wine
- 1/2 cup water
- 3 dashes ground white pepper
Instructions
- Heat up a skillet or wok over high heat and add the sesame oil. When the oil is fully heated, add the ginger strips and stir fry until light brown or aromatic.
- Add the chicken and stir fry for about 10-15 seconds before adding the soy sauce, wine, and ground white pepper. Add the water and do a few quick stirs.
- Cover the skillet or wok with the lid and turn the heat to low heat and let the chicken cook for about 10 minutes or until the sauce thickens and the meat becomes tender. Dish out and serve immediately.
Notes
- If the sauce thickens too much or dries out, add a little water and continue cooking until the chicken is tender.
- Bone-in chicken legs or thighs can be used if cut into pieces; they provide a richer flavor but may require slightly longer cooking.
- Cut the chicken to bite-sized pieces before cooking for even cooking and easy serving.
