Sesame Soba Noodles
Description
Sesame Soba Noodles cook tender soba noodles that are rinsed and cooled to prevent stickiness. The dressing consists of rice wine vinegar, soy sauce, sesame oil, sugar, minced garlic, and grated ginger, which together create a balanced flavor combining tanginess, umami, nuttiness, sweetness, and subtle spice. Freshly sliced green onions and chopped cilantro are stirred in for brightness and herbal notes, while sesame seeds add a light crunch.
This dish can be served cold or at room temperature, making it suitable as a light main or side dish. Sliced hard-boiled eggs add protein and richness, enhancing the dish's texture and making it more filling. The noodles absorb the dressing lightly, preserving their springy bite.
Preparing the noodles according to package instructions and thoroughly rinsing under cold water is important to set the texture. The dish is best served fresh and can be made ahead and refrigerated briefly.
