Sesame Soy Beef Bowls

Sesame Soy Beef Bowls feature ground beef cooked with brown sugar, soy sauce, toasted sesame oil, chili garlic sauce, and ginger, served over jasmine rice topped with spiralized zucchini, grated carrot, green onions, and sesame seeds. The combination offers a balanced sweet and savory flavor with a hint of heat and the fresh texture of vegetables. This dish is a filling, flavorful bowl meal ideal for weeknight dinners or meal prep.

Description

This dish starts by cooking jasmine rice as the base. Ground beef is browned in a skillet, then combined with brown sugar, low sodium soy sauce, toasted sesame oil, chili garlic sauce, and freshly ground ginger. The beef simmers briefly to meld the flavors. Green onions are stirred in near the end to provide a fresh bite. Spiralized zucchini is added and cooked briefly to maintain slight crunch, preventing the dish from becoming mushy. The bowls are assembled by spooning rice into serving dishes, topping with the beef mixture and zucchini noodles, then garnishing with freshly grated carrot and sesame seeds.

The resulting bowl offers a savory and slightly sweet flavor profile with the nutty aroma of sesame from the oil and seeds. The chili garlic sauce imparts subtle heat. The contrast of tender beef, crisp zucchini noodles, and crunchy carrot adds pleasant texture. This meal can be served warm and is satisfying for a single-serving bowl meal or family dinner.

Ingredients

Servings
  • 1 cup jasmine rice uncooked
  • 1 pound ground beef lean
  • 3 tablespoons brown sugar
  • 3 tablespoons soy sauce low sodium
  • 2 tablespoons sesame oil toasted
  • 1 tablespoon Chili garlic sauce
  • ¼ teaspoon ginger freshly ground
  • 4 green onions thinly sliced
  • 1 carrot freshly grated
  • 1 zucchini spiralized
  • 1 to 2 tablespoons sesame seeds for topping

Instructions

  1. Cook the rice according to the package directions. You most likely will need 1 1/2 cups water along with a tablespoon of butter or olive oil. While the rice is cook, make the beef.
  2. Heat a skillet over medium heat and add the ground beef. Break it apart with a wooden spoon until it's in small pieces and brown it until the fat is rendered and cooked out. Once browned, stir in the sugar, soy sauce, sesame oil, chili garlic sauce and ginger. Reduce the heat to low and toss well, cooking for 5 minutes. Stir in the green onions. Spiralize a zucchini squash and quickly toss it in with the beef, just to cook it for a minute or two. I wouldn't cook much longer - we don't want it to be mushy!
  3. Spoon the rice in bowls and top with the beef and zoodles. Grate a bit of carrot on top. Sprinkle on the sesame seeds. Serve!
