Seven Layer Magic Bars (Lightened up)

These Seven Layer Magic Bars feature a graham cracker crust mixed with egg whites, layered with shredded coconut, mini chocolate chips, pecans, and butterscotch chips. A drizzle of sweetened condensed milk and Greek yogurt mixture binds the layers when baked. The bars set firm after cooling, creating a chewy and nutty dessert with varied textures from crunchy crust to creamy topping.

Description

Seven Layer Magic Bars (Lightened up) start with finely ground cinnamon graham crackers combined with egg whites to form a sturdy crust pressed into the baking pan. Toppings include unsweetened shredded coconut, mini chocolate chips, chopped pecans, and butterscotch chips, contributing sweetness and nutty notes. The sweetened condensed milk mixed with Greek yogurt is drizzled atop before baking, which melts and binds the layers together.

Baked at a moderate temperature, the bars develop a chewy texture with contrasting crunchy and soft elements. Cooling allows the bars to firm up, making them easier to slice and eat. The sweetened condensed milk ensures a rich finish despite the lighter ingredient choices.

These bars can be enjoyed warm or chilled, with refrigeration enhancing their set consistency. They keep well in an airtight container for up to two weeks in the fridge and for about a week at room temperature, making them convenient for make-ahead treats or gatherings.

Ingredients

Servings
  • 9 cinnamon graham crackers this is one full pack, full sheets
  • 1/3 cup egg white, 80g
  • 1/4 cup shredded coconut unsweetened, 30g
  • 3 Tbsp chocolate chips mini, 45g
  • 1/4 cup pecans chopped, 30g
  • 2 Tbsp butterscotch chips 30g
  • 1/2 cup sweetened condensed milk fat-free, 164g
  • 1/4 cup Greek yogurt can omit, plain, nonfat, 60g

Instructions

  1. Preheat the oven to 325 degrees F. Line a 8x8-inch baking pan with parchment paper.
  2. Add the graham crackers to a food processor or blender and pulse until you have fine crumbs. Transfer the crumbs to a bowl with the egg whites and stir together. Then transfer to the prepared baking dish and press down evenly (I used a piece of parchment sprayed with cooking spray to do this).
  3. Sprinkle the coconut, mini chocolate chips, pecans, and butterscotch chips over the graham cracker crust.
  4. In a small bowl, stir together the sweetened condensed milk and yogurt. Evenly drizzle the milk mixture over the toppings.
  5. Bake for 18-20 minutes.
  6. Let bars cool in the pan for 10-15 minutes. If you wish to eat warm, cut into bars. If you prefer them cold, go ahead and store them in the fridge, covered, and cut into bars when you are ready to eat. They will be easier to cut the longer they have set!

Notes

  • Let the bars chill overnight for the best texture and flavor.
  • Store bars in an airtight container in the fridge for up to 2 weeks or at room temperature up to 1 week.
