Seven Minute Frosting
Description
This frosting combines egg whites, granulated sugar, light corn syrup, water, salt, and cream of tartar heated and beaten over a double boiler. The gentle heat cooks the sugar while the mixer whips air into the egg whites, creating a stable, glossy meringue that holds peaks well. The addition of cream of tartar stabilizes the foam structure, while salt balances the sweetness. After cooking and whipping, vanilla extract is stirred in to impart flavor.
The frosting’s texture is light and fluffy, with a smooth sheen that hardens slightly after cooling. It works well as a topping for cakes and cupcakes where a pale, high-shine frosting is desired. It needs to be used immediately for best texture, and leftovers should be refrigerated.
Careful separation of egg whites is essential to avoid yolk contamination, which can prevent proper whipping. A proper double boiler setup ensures the mixture heats evenly without cooking the eggs too quickly. Corn syrup contributes to the frosting’s smooth texture and aids in achieving the signature glossy peaks.
Ingredients
- 2 egg large, whites
- 3/4 cup granulated sugar
- 1/3 cup light corn syrup
- 2 tablespoons water lukewarm
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
Instructions
- Add the egg whites, sugar, corn syrup, water, salt, and cream of tartar to the top of a double boiler.
- Place top pot over rapidly boiling water.
- Beat the egg mixture with a hand mixer on low for 30 seconds.
- Increase the speed to medium-high, and continue mixing until the egg mixture stands in peaks (see the picture above the recipe).
- Remove from heat.
- Mix in vanilla extract.
- Use immediately to frost your cake or cupcakes.
- Refrigerate any leftover frosting.
Notes
- Use cold egg whites separated carefully to avoid yolk, which prevents proper whipping.
- Corn syrup helps achieve the glossy texture and smooth mouthfeel; substitutes are not recommended.
- If you don't have a double boiler, set a heatproof bowl over simmering water to mimic the effect without direct heat.
