Shanghai Soy Scallion Noodles

Shanghai Soy Scallion Noodles showcase a bright, savory sauce made from dark and light soy sauces, sugar, and fried scallions. The key feature is the scallion oil, derived from slowly fried scallions in neutral oil until golden, which provides a rich, fragrant base. This sauce coats Chinese white noodles, which are cooked al dente, creating a simple yet flavorful dish. Optional but recommended is adding ground pork browned with scallions for a hearty topping. The noodles are tossed with sauce and garnished with crispy scallions, offering a comforting texture and balanced umami taste.

Description

This recipe centers on scallion oil formed by gently frying julienned scallions in neutral cooking oil until golden brown and aromatic, then setting the scallions aside. The infused oil is combined with a mixture of dark soy sauce, light soy sauce, and sugar, simmered briefly to meld flavors. The sauce is poured over cooked Chinese white noodles that have a sturdy but tender al dente texture.

For a more substantial dish, ground pork is browned with additional scallions and added as a topping, imparting a savory meatiness and textural contrast to the noodles. Finishing touches include plating the noodles with some fried scallions on top, enhancing the bright scallion aroma and crunch. The dish serves six and allows individualized seasoning with sauce increments for preferred saltiness.

This Shanghai style noodle dish highlights the mingling of soy sauce depth and fried scallion aroma, creating a straightforward yet satisfying dish that can be served as a main or part of a larger meal. The scallion oil is the defining component, providing a rich, fragrant coating that complements the chewy noodles and optional pork.

Ingredients

Servings
  • 1/3 cup neutral cooking oil generic cooking oil
  • 8 ounces scallions (washed, pat thoroughly dry, and julienned)
  • 3 tablespoons dark soy sauce
  • 3 tablespoons soy sauce light
  • 4 teaspoons sugar
  • 1 pound Chinese white noodles ( cooked until al dente)
  • ground pork pork component addition, 1 cup ground pork, 3 tbsp oil, 1/2 cup chopped scallion
  • oil
  • scallion

Instructions

  1. Heat oil in your wok over medium heat, add the scallions, and let them fry slowly. Once they start to turn golden brown, remove the scallions from the oil and set aside.
  2. To the oil, add both kinds of soy sauce and the sugar. Use low heat and cook the mixture for about two minutes, until it starts to bubble up.
  3. If you want to add pork to your noodles, simply brown the ground pork over high heat with about 3 tablespoons oil. Stir in 1/2 cup chopped scallions, and season with a bit of salt.
  4. This recipe serves six. Portion out the noodles into bowls, and start with a tablespoon of sauce (it really doesn't take much!). You can keep adding a bit more until the saltiness is to your liking. If using the pork, add a spoonful of your crispy pork and scallion mixture to the top, along with a small handful of the reserved fried scallions.
  5. Toss it all together and dig in.
