Sheet Pan Chicken Caprese
Description
This recipe starts with thin chicken breasts arranged on a foil-lined baking sheet, seasoned with olive oil, salt, pepper, and garlic powder. Cherry or grape tomatoes are scattered around the chicken. The baking at 400°F cooks the chicken while roasting the tomatoes to release their juices. After 15 minutes, fresh mozzarella slices are placed atop the chicken breasts, and baking continues until the cheese melts and the chicken reaches a safe internal temperature.
The finished dish features tender chicken with a melted, creamy mozzarella topping, juicy roasted tomatoes, and a drizzle of balsamic glaze adding a sweet and tangy contrast. Fresh chopped basil provides a bright, herbal note that complements the Caprese-style ingredients. This one-pan method simplifies preparation and cleanup.
Serving this dish hot ensures the mozzarella remains melted and creamy. It pairs well with simple sides like salads, roasted vegetables, or crusty bread to complement the Italian-inspired flavors.
