Sheet Pan Chicken Fajitas Recipe
Description
The Sheet Pan Chicken Fajitas Recipe marinates chicken breasts in a mixture of vegetable oil, lime juice, Worcestershire sauce, chili powder, cumin, minced garlic, and salt. Peppers and onions receive part of this marinade before being spread out on a baking sheet.
After soaking the chicken in the remaining marinade, it is placed alongside the vegetables on the sheet pan. The dish is cooked under a low broiler for 15 minutes, flipped, then broiled again for another 15 minutes. This method cooks the chicken thoroughly while allowing the vegetables to soften and caramelize slightly.
Once cooled, the chicken is sliced and served with the roasted peppers and onions in tortillas. Traditional fajita toppings such as avocado, pico de gallo, lime, cheese, cilantro, and sour cream may be added to enhance the dish.
Ingredients
- 1/4 cup vegetable oil
- 3 tbsp lime juice
- 2 tbsp Worcestershire sauce
- 1 tbsp chili powder
- 1 tsp cumin
- 4 cloves garlic minced
- 1/2 tsp salt
- 1 large white onion sliced
- 3 cups bell pepper sliced (any combination of green, red, yellow or orange will work
- 1 lb chicken breast boneless skinless
- 8 tortillas corn or flour

Instructions
- In a medium bowl, combine oil, lime juice, Worcestershire sauce, and all seasonings. Whisk to combine. Set aside ¼ cup of marinade.
- On a large sheet pan, spread out peppers and onions into a single layer.
- Pour ¼ cup marinade all over peppers and onions and toss to combine.
- Place chicken breasts into the remaining marinade, in the bowl, and allow to marinade for 10 minutes.
- Place chicken onto sheet pan with peppers and onions.
- Set broiler to low and cook for 15 minutes.
- Flip chicken over and cook for an additional 15 minutes.
- When the chicken is cool enough to handle, slice.
- Serve chicken, peppers and onions in tortillas with desired toppings.
