Sheet Pan Chicken Sausage Bake

This sheet pan chicken sausage bake is an easy, one-pan weeknight dinner recipe the whole family loves. Its a delicious and healthy meal.

Ingredients

  • 12 ounces smoked chicken sausage chopped into rounds
  • 1 sweet potato peeled and chopped into 1-inch pieces, large
  • 1 head broccoli chopped
  • 1 red bell pepper deseeded and chopped
  • 1 red onion chopped
  • 1/4 cup olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chives dried
  • 1 teaspoon lemon pepper
  • 1 teaspoon red pepper flakes optional
  • brown rice optional, for serving

Instructions

  1. Preheat oven to 425. Add the chicken sausage and all of the chopped vegetables into a large bowl.
  2. Add olive oil and spices. Mix until everything is evenly coated.
  3. Place everything onto a single layer on a large baking sheet.
  4. Bake for 25 minutes. Then, broil for another 2-5 minutes to crisp up the edges.
  5. Serve over brown rice, or on its own.
