Sheet Pan Cod with Moroccan Chermoula Sauce

Sheet Pan Cod with Moroccan Chermoula Sauce features wild cod fillets baked alongside cherry tomatoes and green beans, all coated with a vibrant chermoula marinade. The fish cooks to a flaky texture while the vegetables roast with the herb-spiced sauce, resulting in a colorful and flavorful one-pan meal.

Description

This recipe applies a chermoula sauce, an herb and spice blend typical in Moroccan cuisine, onto cod fillets, cherry tomatoes, and trimmed green beans arranged on a lined sheet pan. The sauce coats all components evenly, complemented by lemon slices placed atop the fish for a bright citrus note.

Baked at 350°F for 12 to 15 minutes, the cod becomes tender and flaky, while the vegetables retain a fresh snap with infused flavors from the herbs and spices. The combination offers a balanced contrast between the mild fish and the lively sauce, with roasted tomatoes adding bursts of sweetness.

This dish serves well as a light dinner or lunch, requiring minimal cleanup due to the sheet pan method. Pairing with simple sides like couscous or rice can complement and extend the meal.
