Sheet Pan Mojo Chicken and Potatoes

Sheet Pan Mojo Chicken and Potatoes combines marinated chicken breasts and thighs with seasoned baby potatoes on one baking sheet, roasted until the chicken is cooked through and the potatoes are tender with a crispy exterior. The dish is finished with chimichurri sauce for a fresh, herbaceous contrast. This meal offers a flavorful protein and starch combination with minimal cleanup.

Description

This recipe features chicken breasts and thighs marinated in mojo criollo sauce, which imparts a citrus-herb flavor profile. The marinade is reserved and combined with olive oil, garlic powder, red pepper flakes, kosher salt, and freshly cracked black pepper to coat halved baby potatoes. Both the marinated chicken and seasoned potatoes are roasted together on a baking sheet at 400°F until the chicken reaches 165°F internally and potatoes are cooked through.

The roasting method creates a caramelized exterior on the potatoes and juicy, flavorful chicken. Serving the dish with chimichurri sauce adds a bright, garlicky herb note that complements the mojo marinade. This one-pan method simplifies preparation and cleanup while delivering distinct textures and layers of flavor.

Use a meat thermometer to confirm the chicken is fully cooked. Roasting time is about 45-50 minutes, depending on oven and chicken piece size. The recipe yields a balanced meal suitable for lunch or dinner.

  • chicken thigh or 4 pieces
  • 3 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 2 lb baby potato washed and sliced in half, multi-colored
  • 4 tsp kosher salt
  • 4 tsp black pepper freshly cracked
  • chimichurri to serve

Instructions

  1. Reserve 3 tbsp mojo for the potatoes.

  7. Serve immediately, with chimichurri sauce.

Notes

  • Marinate chicken for 15 to 30 minutes, or up to 4 hours, to develop flavor.
  • Use a meat thermometer to ensure chicken reaches 165°F for safe doneness.
  • This dish is well complemented by chimichurri sauce served alongside.
  • Refer to separate recipes for preparing mojo criollo sauce and chimichurri.
