Meat Sauce

• 1 tbsp extra virgin olive oil
• 1 onion finely chopped
• 1 carrot finely chopped
• 2 garlic finely chopped, cloves
• 1 bay leaf
• 800 gms lamb 1.75 lbs., minced
• 2 tbsp tomato paste
• 250 ml beef stock 1 cup
• 125 ml red wine 1/2 cup
• 60 ml Worcestershire sauce 1/4 cup
• 120 gms peas frozen, 1 cup
• 3 tbsp parsley coarsely chopped

Creamy Mash

• 800 gms potato coarsely chopped, 1.75 lbs
• 250 ml heavy cream
• 100 gms butter softened, 3.5 oz
