Shepherd's Pie Baked Potato is a hearty dish consisting of baked large potatoes hollowed out and filled with savory cottage pie or shepherd’s pie filling. The potato flesh is mashed with butter and half-and-half to a creamy consistency and used for topping, creating a layered effect reminiscent of classic shepherd's pie but served inside the potato skin. This preparation delivers comforting textures and flavors in a practical portion.

Description

This recipe starts by baking large Russet potatoes until tender, either in the oven or air fryer. The insides are carefully scooped out, leaving the skins intact as edible shells. The extracted potato flesh is combined with butter, salt, and half-and-half or milk to create a creamy mashed potato mixture.

The mashed potato is then piped or spooned atop the potato shells once filled with a ground beef mixture typical of cottage or shepherd’s pie filling. The layered composition mimics traditional shepherd's pie textures with a firm potato casing, savory filling, and smooth mashed potato topping.

These baked potato pies can be served as a satisfying main dish or a filling side. Using lamb for the shepherd's pie filling and beef for cottage pie allows tailoring to preference or tradition. This recipe transforms leftovers or standard shepherd's pie components into individual servings with convenient presentation.

Ingredients

  • 4 large potato organic, baking (like Russet
  • 1 Tbsp butter
  • 2 Tbsp half-and-half or milk
  • ½ tsp salt
  • ½ recipe cottage pie filling (see recipe below)

Instructions

  1. Bake the potatoes in a 375º F (190º C) oven for about 50 minutes or until cooked. Or bake in an air fryer until cooked (as per your air fryer instructions.)
  2. Remove from the oven and scoop out the center, leaving a little potato as a shell. Next, peel the skin from the top part of the potato which was cut out and place in a medium bowl.
  3. Scoop out the more of the inside of the potato (a grapefruit spoon works well) and put the part you took out into the bowl with the tops of the potatoes. Mash or rice the remaining potato with some butter, salt and half and half (or milk) to a creamy consistency.
  4. When finished with all of the potatoes, place on a baking tray. 
  5. Fill each potato with the ground beef mixture. Don't overfill them or they will leak.
  6. You can pipe the mashed potato by placing the mashed potato in a piping bagwith a large tip like 4B. Or you can just spoon the potatoes on top, and fluff them up with a fork.
  7. Next, place the shepherd's pies in baked potatoes in a baking dish for the oven, (or air fryer at 350 F/175 C) and bake for about 20 minutes.
  8. To brown the top in the conventional oven, place under the broiler for a minute or two, but be careful as they will brown very quickly.
  9. Remove from the oven and serve immediately. Serve your shepherd's pie baked potato immediately, but warn your diners that the filling will be extremely hot. Serve with or (without peas) or another vegetable.

Notes

  • Use lamb meat for an authentic shepherd’s pie filling and beef for a cottage pie variation.
