Shipwreck Casserole

Shipwreck Casserole layers sliced onions, potatoes, and carrots topped with seasoned ground beef and rice, all soaked in a tomato soup and water mixture. The casserole cooks slowly, either in an oven or slow cooker, allowing the vegetables to soften and the rice to cook through. The resulting dish combines textures of tender vegetables and hearty meat, making it a filling casserole option.

Description

Shipwreck Casserole is a layered dish featuring white onions, medium sliced potatoes, carrots, ground beef seasoned with seasoning salt, and uncooked white rice. These ingredients are arranged in a casserole dish or slow cooker, with tomato soup mixed with water poured on top before cooking. The slow baking or cooking process softens the vegetables and cooks the rice until tender.

The tomatoes and seasoning salt give the dish a savory base while the meat provides richness. The combination yields a hearty texture with the softness of cooked vegetables, the tenderness of the beef, and the slight chew of rice. This method simplifies a one-dish meal with layered flavors melding during the cooking time.

It can be served as a complete meal on its own due to its protein and vegetables. The layering technique helps distribute flavors evenly. Variations can be made by changing the tomato soup flavor to add subtle differences, such as using roasted red pepper.

For cooking, slicing vegetables thicker is recommended for long slow cooker times. Placing rice below the ground beef may improve rice cooking. The tightly covered dish prevents moisture loss ensuring even cooking.

Notes

  • The tomato soup flavor can be varied, such as using roasted red pepper, to alter the casserole's taste.
  • Thicker vegetable slices are better suited for slow cooker preparation to prevent overcooking.
  • If rice is not cooking fully, try placing the rice under the ground beef layer.
  • Cover the casserole tightly during cooking to retain moisture and ensure thorough cooking of all ingredients.
