Shish Kebab
Description
This Shish Kebab recipe uses chunked chicken thigh meat marinated in a mixture of Greek yogurt, paprika, garlic, ginger, lime juice, tomato paste, black pepper, and olive oil. The yogurt helps tenderize the meat while the spices add vibrant flavor and color. The chicken should marinate for at least four hours, preferably overnight, to absorb the flavors fully.
Before grilling, wooden skewers are soaked in water to prevent burning. The chicken chunks are then alternated on the skewers with cubed bell peppers in multiple colors for visual contrast and sweet flavor, and red onion pieces that char and caramelize on the grill. The skewers are lightly sprayed with oil before cooking on a hot grill, turning until all sides develop browned, slightly crispy edges while remaining juicy inside.
Shish kebabs are best served hot off the grill with accompaniments such as pita bread, hummus, or aioli, which add creamy and fresh elements to balance the smoky grilled meat and vegetables. This makes a satisfying meal with a variety of textures and tastes.
Ingredients
- 1 lb chicken thigh cut into 1 to 1 ½ inch cubes, boneless
- ¼ cup Greek yogurt
- 1 ½ tablespoon paprika
- 6-8 cloves minced
- 1 teaspoon ginger grated
- 2 tablespoon olive oil
- lime juice of 1
- 1 teaspoon tomato paste
- 1 teaspoon black pepper ground
- salt to taste
- bell peppers I used all 3 colors of bell peppers for color, cut into 1 to 1 ½ inch cubes
- red onion cut into 1 to 1 ½ inch cubes
Instructions
- Mix all spice ingredients together. Add it to Greek yogurt along with lime juice. Whisk well.
- Add chicken cubes to the chicken marinade and mix well to coat every piece evenly.
- Cover and marinate over night in the fridge. Try to marinate chicken for atleast 4 hours.
- Next day, fire up your outdoor grill.
- Immerse skewer sticks in water for about 30 minutes. Remove from water and lightly spray in with oil before skewering the meat. If you are using metal skewers rod, you can just go ahead with the next step.
- Skewer the chicken cubes along with cubed capsicum and cubed onions. Pour the remaining marinate over the skewed chicken.
- Place on hot grill and grill until meat begins to brown. Turnover and grill the other side too. Once meat is grilled on both sides, remove from grill.
- Serve it hot with pita bread and hummus or aioli.
