  • cup plain whole milk yogurt
  • ¼ cup lemon juice
  • ¼ cup olive oil
  • 4 cloves garlic minced
  • 2 tablespoons tomato paste
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cinnamon
  • ½ teaspoon ground allspice
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon cayenne pepper
  • teaspoons salt
  • ½ teaspoon black pepper
  • 2 pounds boneless, skinless chicken breast cut into 1½-inch cubes

Instructions

  1. In a large bowl, combine yogurt, lemon juice, olive oil, garlic, tomato paste, paprika, oregano, cinnamon, allspice, cardamom, cayenne pepper, salt, and black pepper. Mix well to create the marinade.
  2. Add the chicken pieces to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
  3. Preheat the grill to medium-high heat. Thread the marinated chicken onto skewers. Grill the skewers for about 6-7 minutes on each side, or until the chicken is thoroughly cooked and has nice grill marks.
  4. Serve hot with sides of your choice, such as pita bread, garlic sauce, and fresh vegetables.
