Shortbread Cookies

Shortbread Cookies combine simple ingredients—unsalted butter, sugar, and flour—into a tender, crumbly treat. The dough is creamed gently then pressed into a pan and baked without browning, preserving the pale color and delicate texture. Cooling slightly before cutting helps maintain clean edges. These cookies offer a buttery richness with a soft yet crumbly bite, ideal for serving alongside tea or coffee.

Description

Shortbread Cookies feature a straightforward blend of softened unsalted butter, sugar, and flour. The butter and sugar are creamed together to create an airy base, into which the flour is folded carefully to avoid overmixing. This method provides a tender, crumbly texture rather than a chewy one. The dough is pressed into a baking pan and pricked with a fork to prevent bubbling during baking. Baked at a low temperature until set but not browned, the cookies stay pale and maintain their delicate crumb. They are cut into squares while still slightly warm to ensure clean slices.

The flavor is dominated by buttery richness and subtle sweetness, with a tender, melt-in-the-mouth texture. The absence of leavening agents results in a dense but crumbly cookie, making it ideal for those who enjoy classic buttery baked goods. This recipe is also flexible for adding subtle variations like vanilla or lemon zest if desired.

Shortbread cookies can be served as a simple snack, with tea or coffee, or used as a base for layered desserts. Their firm but tender texture makes them easy to store and enjoy over several days.
