Shredded Brussel Sprout Salad
Description
The base of the salad is shredded Brussels sprouts mixed with olive oil and crispy cooked bacon cubes or pancetta. The dressing blends mayonnaise, freshly grated parmesan cheese, yellow mustard, minced garlic, balsamic vinegar, salt, and black pepper for a savory, creamy coating.
After tossing the salad with the dressing, it is recommended to chill it for 30-60 minutes to allow the flavors to develop. The result is a crisp texture from raw sprouts balanced with smoky bacon bits and a tangy, cheesy dressing featuring subtle acidity from the balsamic vinegar.
The salad can be served chilled or, if preferred, at room temperature after sitting for 15 minutes post-dressing. Leftovers should be stored in an airtight container in the refrigerator and consumed within 1-2 days to maintain freshness and texture.
Ingredients
BRUSSEL SPROUT SALAD
- 3 cups Brussels sprouts shredded
- 2 tablespoons olive oil
- ¼ cup Bacon cooked, cubed, or pancetta
FOR THE DRESSING
- 3 tablespoons mayonnaise
- 2 tablespoons Parmesan Cheese freshly grated
- 1 teaspoon yellow mustard
- 1 clove garlic minced
- dash black pepper
- ¼ teaspoon salt (more or less to taste)
- 1 tablespoon balsamic vinegar
**I shredded my brussel sprouts with a food processor, pulse just until shredded (2 or 3 pulses and 5 or 6 at a time)
Instructions
BRUSSEL SPROUT SALAD
- Cook the chopped bacon or pancetta in a frying pan, drain and set aside.
- In a large bowl combine the shredded Brussels sprouts, olive oil and cooked bacon or pancetta.
FOR THE DRESSING
- In a small bowl whisk to combine, the mayonnaise, parmesan cheese, mustard, minced garlic, salt and pepper and balsamic vinegar.
- Drizzle the dressing over the brussel sprout mixture and toss gently to combine. Let chill 30-60 minutes before serving. Enjoy!
Notes
- The salad can be served chilled after chilling 30-60 minutes or at room temperature after 15 minutes.
- Store leftovers in an airtight container in the fridge for up to 1-2 days.
