Shredded Chicken Pitas with Sun-dried Tomato Vinaigrette

Ingredients
- 2 tablespoons balsamic vinegar
- 1 ½ tablespoons sun-dried tomato oil
- 1 tablespoon sun-dried tomatoes chopped, drained, oil-packed
- ¼ teaspoon black pepper freshly ground
- 1 garlic minced, clove
- 4 cups chicken breast 2-3 chicken breasts, shredded, cooked
- 1 cup tomato chopped
- ½ cup Parmesan Cheese grated
- ¼ cup basil thinly sliced, fresh
- 6 (6-inch) pita bread cut in half
- 3 cups mixed baby greens
Instructions
- Combine first 5 ingredients in a large bowl. Stir in chicken, tomato, cheese, and basil.
- Line each pita half with 1/4 cup greens. Divide chicken mixture evenly among pita halves.
