Shredded Chicken Pitas with Sun-dried Tomato Vinaigrette

Ingredients

  • 2 tablespoons balsamic vinegar
  • 1 ½ tablespoons sun-dried tomato oil
  • 1 tablespoon sun-dried tomatoes chopped, drained, oil-packed
  • ¼ teaspoon black pepper freshly ground
  • 1 garlic minced, clove
  • 4 cups chicken breast 2-3 chicken breasts, shredded, cooked
  • 1 cup tomato chopped
  • ½ cup Parmesan Cheese grated
  • ¼ cup basil thinly sliced, fresh
  • 6 (6-inch) pita bread cut in half
  • 3 cups mixed baby greens

Instructions

  1. Combine first 5 ingredients in a large bowl. Stir in chicken, tomato, cheese, and basil.
  2. Line each pita half with 1/4 cup greens. Divide chicken mixture evenly among pita halves.
