Shrimp and Pineapple Pizza

Ingredients

  • 10 ounce thin crust Boboli pizza crust (see note)
  • 1 tablespoon olive oil
  • 2 cups Monterey jack cheese shredded
  • cup red onion peeled and chopped
  • ¼ cup pineapple tidbits drained
  • 25 cooked shrimp peeled & deveined, tail-off
  • 3 tablespoons Parmesan Cheese grated
  • fresh cilantro chopped, for garnish

Instructions

  1. Preheat oven to 500 degrees
  2. Brush olive oil on pizza crust
  3. Sprinkle crust with monterey jack cheese
  4. Top with shrimp, pineapple, red onion, and parmesan cheese
  5. Bake 8-10 minutes or until crust is deep golden and cheese is melted (10 minutes was good for me)
  6. Sprinkle with chopped cilantro
  7. Cut into wedges
  8. Enjoy

Notes

  • Using a pre-made crust helps get this pizza on the dinner table ASAP. You can also use your favorite homemade or store-bought pizza dough. If you're using raw pizza dough, spread it out on the baking sheet and top with olive oil. Bake for 6-8 minutes until par-baked. Take the crust out of the oven, add the rest of the toppings as directed, and continue to bake until the pizza is done.
