Shrimp and Pineapple Pizza

Prepare to be amazed by sweet and savory Shrimp and Pineapple Pizza! It makes a great party appetizer, lunch, or a fun option for pizza night!

Ingredients
- 10 ounce thin crust Boboli pizza crust (see note)
- 1 tablespoon olive oil
- 2 cups Monterey jack cheese shredded
- ⅓ cup red onion peeled and chopped
- ¼ cup pineapple tidbits drained
- 25 cooked shrimp peeled & deveined, tail-off
- 3 tablespoons Parmesan Cheese grated
- fresh cilantro chopped, for garnish
Instructions
- Preheat oven to 500 degrees
- Brush olive oil on pizza crust
- Sprinkle crust with monterey jack cheese
- Top with shrimp, pineapple, red onion, and parmesan cheese
- Bake 8-10 minutes or until crust is deep golden and cheese is melted (10 minutes was good for me)
- Sprinkle with chopped cilantro
- Cut into wedges
- Enjoy
Notes
- Using a pre-made crust helps get this pizza on the dinner table ASAP. You can also use your favorite homemade or store-bought pizza dough. If you're using raw pizza dough, spread it out on the baking sheet and top with olive oil. Bake for 6-8 minutes until par-baked. Take the crust out of the oven, add the rest of the toppings as directed, and continue to bake until the pizza is done.
