Shrimp Fajitas
Description
This recipe uses a homemade fajita seasoning mix with spices including cumin, onion powder, garlic powder, chili powder, oregano, salt, and paprika that flavors the shrimp and vegetables. The shrimp are marinated briefly in lime juice, olive oil, and most of the seasoning, then seared quickly in a hot pan to retain tenderness and juiciness. The bell peppers and onions are cooked separately in the same pan until they begin to soften, then seasoned and combined with the shrimp to meld the flavors.

Fajita Seasoning:
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt

Instructions
- Whisk the fajita seasoning in a small bowl.
- To a large bowl, add the shrimp, lime juice, oil, and about ¾ of the fajita seasoning; toss or stir to combine.
- Heat a large pan over medium-high heat. Add the shrimp to the pan and cook for 1 minute on each side or until cooked through. Remove from the pan and set aside. To the same pan, add a light drizzle of oil and the bell peppers and onions and cook for about 2-3 minutes, just until they begin to soften. Sprinkle with the remaining fajita seasoning. Push the peppers to one side and return the shrimp to the pan.
- Serve with your fresh tortilla, guacamole or avocado, sour cream or salsa, grated cheese, and freshly sliced lime.
