Shrimp Garlic Noodles
Description
The noodles, separated by hand, are briefly rinsed with boiling water to remove excess oil and slightly cook them. Butter is melted with minced garlic then combined with oyster sauce and sugar before tossing the noodles in this flavorful mixture. Parmesan cheese is stirred in last for a subtle creamy depth.
The shrimp, kept shell-on with the vein removed, are sautéed quickly in olive oil with garlic and seasoned with soy sauce, sugar, scallions, and a pinch of salt to complement the noodles. The shrimp and noodles are combined for serving, allowing the sauce to coat the tender strands and seafood evenly.
This dish makes a satisfying meal with balanced textures and savory garlic notes.
Substitute with dry spaghetti if fresh Taiwanese noodles are unavailable.
Ingredients
Garlic Noodles
- 2 lbs (1kg) yellow oil noodles fresh, taiwanese-style
- 4 tablespoons butter melted, unsalted
- 10 cloves garlic minced
- 2 1/2 tablespoons oyster sauce Lee Kum Kee brand or oyster flavored sauce
- 1 tablespoon sugar
- 3 tablespoons Parmesan Cheese Kraft, grated
Shrimp
- 10 oz (280g) Shrimp shell-on
- 1 clove garlic minced
- 1 tablespoon olive oil
- 1/2 tablespoon soy sauce
- 1/2 teaspoon sugar
- 1 tablespoon scallion chopped
- 1 pinch salt
Instructions
- Loosen the fresh noodles with your hands, ensuring that every strand is separated. Transfer the noodles to a colander and place it in the kitchen sink. Boil a pot of water. Pour the hot water over the noodles to rinse off the oil and slightly cook them. Drain the noodles and set aside. Keep the shell on the shrimp and cut a slit along the back to remove the vein. Rinse the shrimp with water and pat very dry with paper towels. Set aside.
- Heat a skillet or wok over medium heat and add the butter. Sauté the garlic until it starts to brown. Add the oyster sauce and sugar, stirring to combine well before adding the noodles to the skillet or wok. Stir continuously with a spatula or a pair of Chinese cooking chopsticks to mix the noodles with the sauce. Turn off the heat.
- Add the Parmesan cheese to the garlic noodles and stir to combine well. Transfer the noodles to a serving platter.
- In the same wok or skillet over medium heat, add the olive oil and garlic. Quickly sauté, then add the shrimp, soy sauce, and sugar. Stir the shrimp until they are cooked through. Add a pinch of salt and the scallions, then dish out.
- Divide the garlic noodles among four serving bowls. Top each bowl with 4-5 shrimp and serve immediately.
Notes
- If fresh Taiwanese-style yellow oil noodles are unavailable, substitute with 8 ounces of spaghetti for a comparable texture.
