Shrimp Lettuce Wraps

These shrimp lettuce wraps have succulent shrimp, fresh butter lettuce, and crunchy veggies with the perfect sweet and savory peanut sauce for dipping.

Ingredients

Servings

For shrimp:

  • 1 pound Shrimp peeled and deveined, large
  • 1 tablespoon garlic minced
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

For peanut sauce:

  • 1/2 cup peanut butter creamy
  • 1 teaspoon honey
  • 1 teaspoon sriracha
  • 1 teaspoon lime juice
  • 1 teaspoon olive oil
  • water as needed, cold

For assembly:

  • 1 butter lettuce large head
  • 2 cups cabbage thinly sliced, slaw
  • 1 cup carrot matchstick cut
  • 1 cup red bell pepper thinly sliced
  • 1/2 cup red onion diced
  • peanut optional, for topping, chopped
  • sesame seeds optional, for topping
  • cilantro for topping, minced
  • lime for serving, wedges

Instructions

For shrimp:

  1. In a medium sized mixing bowl add shrimp, garlic, lime juice, olive oil, kosher salt, and black pepper.
  2. Stir to combine, cover with plastic wrap, and add to the refrigerator for 30 minutes.
  3. When you're ready to cook the shrimp, add a large 12-inch skillet over medium high heat.
  4. Add the shrimp and cook for a few minutes per side, or until the shrimp are pink and firm in texture.
  5. When fully cooked, remove from heat and set aside while you prepare the peanut sauce and slaw.

For peanut sauce:

  1. In a food processor add all the ingredients except the water and blend until smooth.
  2. Add water if you want the sauce to be thinner.
  3. If you don't own a food processor you can whisk together the sauce.

For assembly:

  1. Pull the leaves off the butter lettuce and set it on a plate.
  2. In a large mixing bowl toss together the sliced cabbage, carrots, red bell pepper, and red onion.
  3. Lay out a butter lettuce leaf, top with a spoonful of vegetables, cooked shrimp, and a drizzle of peanut sauce.
  4. Top with crushed peanuts, sesame seeds, cilantro, and lime if desired.
