Shrimp Po Boy
Description
The Shrimp Po Boy recipe includes a creamy dressing made from mayonnaise, ketchup, horseradish sauce, lemon juice, and Creole seasoning spiced with paprika and garlic powder. Shrimp are cooked in butter and garlic until just pink, seasoned to taste with Creole spices. Assembled on split French rolls or hoagie buns, the shrimp is layered with shredded cabbage and topped with the sauce for a contrast of textures and flavors.
This sandwich is versatile and can be altered by breading and frying the shrimp, or substituting other seafood like catfish, oysters, or soft-shell crab. The sandwich offers a balance of slight heat, creamy tang, and fresh crunch suited for lunch or casual dinners.
If frying shrimp, use a cornmeal and flour coating cooked until golden in hot oil. Adjust Creole seasoning to control spice level. The straightforward assembly and adaptable fillings make it practical for varied preferences.
