Shrimp Po Boy

Shrimp Po Boy sandwiches feature seasoned sautéed shrimp dressed with a creamy Cajun sauce and crisp shredded cabbage on French-style rolls. The rich, zesty sauce complements the tender shrimp, while the shredded cabbage adds fresh crunch. The sandwich combines buttery garlic shrimp with tangy, spicy flavors for a satisfying handheld meal.

Description

The Shrimp Po Boy recipe includes a creamy dressing made from mayonnaise, ketchup, horseradish sauce, lemon juice, and Creole seasoning spiced with paprika and garlic powder. Shrimp are cooked in butter and garlic until just pink, seasoned to taste with Creole spices. Assembled on split French rolls or hoagie buns, the shrimp is layered with shredded cabbage and topped with the sauce for a contrast of textures and flavors.

This sandwich is versatile and can be altered by breading and frying the shrimp, or substituting other seafood like catfish, oysters, or soft-shell crab. The sandwich offers a balance of slight heat, creamy tang, and fresh crunch suited for lunch or casual dinners.

If frying shrimp, use a cornmeal and flour coating cooked until golden in hot oil. Adjust Creole seasoning to control spice level. The straightforward assembly and adaptable fillings make it practical for varied preferences.

For the Creamy Cajun Sauce:

  • 1 cup mayonnaise Best Foods or Hellmann's
  • cup ketchup
  • 3 Tablespoons horseradish sauce
  • 1 Tablespoon lemon juice
  • ½ to 1 Tablespoon creole seasoning depending on how spicy you like it
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika

For the shrimp:

  • 4 Tablespoons butter
  • 2 cloves garlic minced
  • 1 pound Shrimp medium to large, uncooked, peeled and deveined
  • creole seasoning to taste
  • 4 French-style hoagie roll Bratwurst buns or work great too, or French bread
  • cabbage or lettuce, shredded

Instructions

  1. Combine sauce ingredients in a mixing bowl until smooth. Set aside.
  2. Heat a large skillet to medium heat, add butter and garlic. When the butter is hot and melted, add shrimp. Sprinkle Creole seasoning over the shrimp. It can be a little spicy so only sprinkle it to your personal taste. When the shrimp is pink all the way through, remove it from heat. Do not overcook.
  3. Split the rolls open and divide the shrimp evenly between each roll. Top with the creamy Cajun sauce and shredded cabbage, to taste.

Notes

  • For a different texture, bread shrimp in a cornmeal-flour mix and deep-fry until golden.
  • Enhance seasoning by adding Worcestershire sauce, hot sauce, cayenne, or mustard to the shrimp.
  • Swap out shrimp with other seafood like catfish, oysters, soft-shell crab, or lobster according to preference.
