Description

This Shrimp Scampi recipe begins by heating olive oil and part of the butter in a skillet over medium-high heat, briefly cooking minced garlic to release its aroma. Fresh shrimp, peeled and deveined, are added and seasoned with salt and pepper, cooking quickly until they turn pink on each side. Adding dry white wine and red pepper flakes creates a simmering sauce that reduces by half, concentrating flavor while gently cooking the shrimp through.

The remaining butter and fresh lemon juice are stirred in at the end of cooking to enrich the sauce with a silky texture and citrus brightness. Fresh parsley sprinkled on top adds herbal freshness.   • 1 ½ pounds Shrimp large prawns, deveined and shells removed, tails off or on based on your preference
  • 2 Tablespoons olive oil
  • 4 Tablespoons butter divided
  • 5 cloves garlic minced or 1 1/2 Tablespoons Minced Garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup white wine dry
  • ½ teaspoon red pepper flakes
  • ½ lemon juiced
  • ¼ cup parsley for serving, fresh chopped

Instructions

  1. Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium high heat.  Add the garlic to the pan and cook for 1 minute until aromatic.
  2. Stir in the shrimp, season it with salt and pepper and cook it for 1-2 minutes on each side until the shrimp begins to turn pink.
  3. Pour in the wine and red pepper flakes. Bring the mixture to a low simmer and cook for 3-4 minutes until the wine reduces to about half of the amount and the shrimp is cooked through (all pink).
  4. Stir in the remaining butter and lemon juice and heat until the butter is fully melted
  5. Serve topped with the fresh parsley and enjoy!

Notes

  • Use a dry, good-quality white wine to enhance flavor; cooking wine or chicken broth can substitute if needed.
  • Adjust red pepper flakes based on spice tolerance but do not omit completely as they provide key flavor dimension.
