Shrimp Scampi

Shrimp Scampi features large shrimp marinated with garlic, salt, and red pepper flakes, sautéed in olive oil, then finished with white wine, lemon juice, and butter to create a bright and buttery sauce. This method yields tender shrimp coated in a flavorful sauce, ideal for a quick, elegant main dish.

Description

This Shrimp Scampi recipe begins by marinating peeled, deveined shrimp with minced garlic, kosher salt, red pepper flakes, and half the olive oil for one hour. The shrimp are then cooked briefly in the remaining olive oil until browned. The pan is deglazed with dry white wine and lemon juice, then reduced before incorporating butter to form a smooth sauce.

The finished dish has a balance of savory, slightly spicy, citrusy, and rich buttery notes that coat the shrimp, which remain tender due to quick cooking. The garlic and red pepper flakes add mild heat and aroma, while the lemon juice brightens the sauce. Parsley can be added for a fresh finish.

Shrimp Scampi can be served alone or with accompaniments such as pasta, rice, or crusty bread to soak the sauce. The preparation highlights quick marination and cooking for optimal shrimp texture and flavor.
