Shrimp Scampi Recipe
Description
Shrimp Scampi is a classic seafood dish that uses butter, olive oil, and minced garlic as the flavor base. Large shrimp are seared briefly to develop tenderness and begin turning pink, seasoned with salt and black pepper. The addition of dry white wine or chicken stock and red pepper flakes introduces acidity and subtle heat while simmering the shrimp to finish cooking and infuse the sauce with flavor. The final step enriches the sauce by stirring in extra butter, lemon juice, and chopped parsley, giving it brightness and a fresh herbal note.
The sauce clings nicely to the shrimp and pasta or crusty bread when served. The relatively quick cooking time preserves the shrimp's juicy texture without becoming rubbery. The recipe's method advises caution to avoid overcooking by only lightly searing the shrimp before adding liquids, then simmering briefly to completion.
Serve this dish immediately to enjoy the shrimp at its ideal tenderness. It pairs naturally with linguine or angel hair pasta, or simply with warm, crusty dinner rolls or French bread to soak up the flavorful scampi sauce. Incorporating the reserved butter at the end enhances the sauce's body and mouthfeel.
Ingredients
- ¼ cup butter divided (57g)
- 2 tablespoons extra-virgin olive oil
- 5 garlic minced (20g, cloves
- 1 pound Shrimp peeled and deveined (450g, large
- ¼ teaspoon salt
- ¼ teaspoon black pepper ground
- ¼ cup dry white wine 60ml, or chicken stock
- ¼ teaspoon red pepper flakes
- 2 tablespoons lemon juice freshly squeezed
- ¼ cup parsley chopped, fresh
- cooked pasta for serving
- crusty bread for serving
Instructions
- A large skillet over medium-high heat, melt the butter and olive oil together. Add the garlic and cook for 30 seconds. Add the shrimp, salt, and black pepper. Cook until the shrimp starts to turn pink, about 1 minute.
- Stir in the wine or chicken stock and red pepper flakes. Bring to a simmer and cook until the liquid reduces by half and the shrimp is cooked through about 3 minutes. Remove from the heat.
- Stir in the remaining 2 tablespoons of butter, lemon juice, and parsley. Serve immediately over hot cooked pasta or with warm crusty bread.
Notes
- Measure and prepare all ingredients before cooking because this recipe cooks quickly.
- Do not overcook the shrimp in the initial searing to prevent a rubbery texture; the shrimp finishes cooking when simmered in the sauce.
- Serve the shrimp scampi immediately so the shrimp remains tender and does not overcook in the sauce.
- The finished sauce is excellent when spooned over linguine, angel hair pasta, or served with crusty bread to soak up the flavorful butter sauce.
- Stirring in butter at the end adds richness and helps the sauce cling to the shrimp and pasta.
