Shrimp Stir Fry with Noodles
Description
The dish starts with cooking shrimp briefly until just firm and pink, preserving their tenderness. Vegetables and garlic are stir-fried next for a crisp-tender texture, seasoned with salt and pepper. Pre-cooked noodles are then combined with the mixture, and the prepared sauce thickened slightly with cornstarch is added to coat the ingredients evenly. Finished by returning the shrimp to the pan, the stir fry maintains a balance of sweet, savory, and citrus notes with a glossy sauce.
Garnishes like green onions and sesame seeds add freshness and texture. This stir fry presents a balanced meal with proteins, vegetables, and noodles in one pan, well-suited for lunch or dinner. Its quick cooking preserves bright vegetable colors and shrimp juiciness.
Ingredients
For the Sauce
- ¼ cup soy sauce
- ¼ cup honey
- ¼ cup orange juice or pineapple juice
- 1 tbsp mirin
- 2 tbsp sesame oil
- 2 tsp cornstarch
For the Shrimp Stir Fry
- 2 tbsp vegetable oil divided
- 4 cloves garlic minced
- 2 cup broccoli cut into bite sized pieces, florets
- 1 to 2 carrot peeled and julienned or shredded
- 1 red bell pepper deseeded and cut into strips
- 1 lb Shrimp peeled and deveined
- salt to taste
- black pepper to taste
- 350 grams noodles I used chow mein noodles
Garnish
- green onions
- sesame seeds
Instructions
- Combine the sauce ingredients and set it aside.
- In a large non-stick skillet or wok, heat up 1 tbsp of oil over medium-high heat. Once hot, add shrimp in a single layer and cook for 1 to 2 minutes on each side, or just until firm and pink. Set aside on a clean plate.
- Add the rest of the oil to the pan and once hot, add the vegetables and garlic and stir fry for 2 to 3 minutes. Season with salt and pepper. Meanwhile, cook your noodles according to the package (mine only requires one minute to cook in boiling water).
- Add the cooked noodles to the pan and continue to stir fry to combine, for another minute. Then, add the sauce and stir fry for another minute.
- Add the cooked shrimp back to the pan and toss to combine.
- Serve as is or garnish with some green onions and sesame seeds.
