Shrimp Sushi Rice Bowl

Ingredients

  • 1 cup white rice cooked per instructions
  • 2 tbsp rice vinegar
  • salt to taste, sea salt
  • Shrimp baby
  • dried seaweed crumbled
  • avocado thinly sliced
  • cucumber diced
  • sesame seeds toasted
  • soy sauce
  • sriracha or wasabi and pickled ginger

Instructions

  1. Make the rice per instructions. Set aside to cool.
  2. When the rice has cooled, add the rice vinegar and season with sea salt, to taste. Mix well.
  3. Spoon the rice into serving bowls.
  4. Add the baby shrimp, crumbled dry seaweed, avocado, and cucumber to the top of the rice.
  5. Sprinkle the top of each rice bowl with toasted sesame seeds.
  6. Serve with soy sauce and sriracha (or wasabi & pickled ginger if you have it!).
  7. Serve and enjoy.
