Shrimp Toast

Shrimp toast combines a sticky shrimp mousse flavored with sesame oil and seasonings, spread thickly on crustless white bread pieces, and coated in sesame seeds before deep-frying. The result is a crispy, golden toast with a savory shrimp topping, often served as an appetizer with chili sauce.

Description

The shrimp mousse is made by blending peeled and deveined shrimp with salt, sugar, sesame oil, and white pepper until sticky and smooth. Thick white bread slices have their crusts removed, then are cut into bite-sized rectangles to receive the mousse topping.

After spreading the mousse evenly on the bread, the pieces are rolled in a mix of white and black sesame seeds, providing a textured and fragrant crust. Deep-frying at approximately 350°F (176°C) crisps the sesame seed layer and lightly browns the bread underneath, creating a balanced contrast of textures.

Shrimp toast is served hot, often paired with chili sauce or similar dips, making it a flavorful snack or appetizer that combines the sweet taste of shrimp with sesame and the crunch of fried bread.

Ingredients

Servings

Shrimp Mousse

  • 8 oz (230g) Shrimp shelled and deveined
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 teaspoon sesame oil
  • 3 dashes ground white pepper

Toast

  • 3 pieces white bread denser and thicker white toast, toast
  • neutral cooking oil for deep-frying, generic cooking oil
  • 3 tablespoons sesame seeds
  • 1 tablespoon black sesame seeds

Instructions

  1. Rinse the shrimp under cold running water and pat them dry with paper towels. Add the shrimp and all the ingredients to a food processor. Blend until the mixture becomes sticky and resembles a mousse. Remove from the food processor and set aside.
  2. Cut off the crusts from the white bread using a bread knife and discard them. Cut each slice of toast lengthwise in half and then crosswise into six rectangular pieces. Place the sesame seeds on a small plate and set aside.
  3. Using a butter knife, spread about 1 tablespoon of the shrimp mousse evenly on each piece of toast. Roll the shrimp toast in the sesame seeds until the surface is completely covered.
  4. Heat 3 inches (7 cm) of oil in a wok or small stockpot to 350°F (176°C). Gently drop the shrimp toast into the oil with the sesame side down. Turn the toast over and fry the white side until light brown. Remove with a strainer or slotted spoon and drain the excess oil on paper towels. Serve immediately with your favorite chili sauce.
